because you're not hearing yourself full-on. people in front of you can hear you because their ears are facing you or whatever. but your ears are on the side of your head, and when you talk or sing, it can warp the sound a bit, plus the sound can vibrate through your head (hard to understand, but then again it's hard to explain). so when you hear yourself over a recording you're hearing yourself in actuality, instead of what your ears and head makes you think you sound like.
